This recipe is perfect if you choose to eat vegetables during Phase 1.The ingredients in this recipe are enough for one serve. You are more than welcome to double or triple the recipe, so you have enough to eat for the entire day.
Ingredients
- 1 garlic clove, peeled
- 500g mixed vegetables of your choice (carrot, spinach, zucchini, swede, celery, tomato, onion, pumpkin)
- 500g / 500mL Water
- 1 tsp Vegetable stock paste
- (for Thermomix owners only)
- ½ tsp Salt
- Pinch ground pepper
- Dried mixed herb
Instructions
Thermomix
- Add garlic to mix bowl and chop 5 seconds/speed 8.
- Add vegetables (roughly chopped) to Thermomix bowl and chop 4 seconds/speed 5.
- Add water, stock paste, pepper and herbs to mixing bowl and cook 12mins/Varoma temp/speed 1. Add an extra 5 mins if you double the recipe or 8 mins if you triple the recipe).
- Serve chunky or blend before serving 1minute/speed 10, increasing the speed slowly.

Conventional
- Finely chop garlic.
- Weigh vegetables
- Chop vegetables into 2-3cm chunks
- Add all ingredients to pot and bring to boil.
- Simmer soup on a low heat for 15 minutes or until vegetables are soft.
- Taste soup and add extra salt, pepper, herbs and spices as desired.
- Serve soup chunky or pour into a blender or use an immersion blender to make soup smooth.
